Additional Allergens/Modifications:
Dairy: Sub butter for avocado oil (or any neutral cooking oil).
Egg: I haven't tested this recipe as egg free, but I would try egg replacer (Bob's Red Mill) first and aquafaba second. If you give this a try egg free, let me know how it works!

Sadly the collapsed during the bake cycle. Maybe it was the way I removed the paddle?

Could be. Usually when it collapses like that it's a yeast issue. Is your yeast newer or older?

I ordered the individual packets from Amazon in October and just opened the first packet.

Hmm! Did you proof the packet beforehand - I'm mentally trouble shooting over here. Bread machines are harder to adjust with environmental factors and ingredients because they are just that, a set machine. Whenever my loaves collapse, it's usually because the yeast isn't fresh enough. I had a bake day with my friend and we made two loaves in the bread machine - all of our ingredients were exactly the same except I used my yeast and she used her own... hers was fresh, mine was older. Her bread came out perfect, mine came out collapsed.

I appreciate your help! The best by date on the package is July 2027. I bought the individual packs hoping to keep it fresher. This is my first time baking with yeast so I’ll proof the yeast ahead of time and see what happens. The bread turned out amazing even with the collapse so I can’t wait to get it right!

Keep me posted on how it goes!! Rooting for you!! Also, if you think the dough is too disrupted taking the piece out of the bottom of it, just leave the mixing piece in during the bake and remove it when it's done. Just make sure you place the bread on something that seals the hole from too much steam getting out until it cools.

I've only tested this recipe out on the bread machine I recommend. Has anyone else tried it with their bread machines? The key to this working is the time-line for proofing, mixing, resting and baking. I've looked up the manufacturers details and it doesn't break down the specs. I know for my machine, start to finish, it's 2 hours and 55 minutes. That includes 3 mixes, fermenting periods and then baking

This recipe was specially designed for the bread machine with its ratios. I do have the yeast bread sandwich loaf in this app which can be doubled easily. And if you want a scoop and go option for bread for the oven, use my bread flour mix as a substitute for the dry ingredients within that recipe. It works great!

I don't add nutritional information because the reality of it is that if you don't buy the exact brand I use for ingredients, the data isn't correct. There are too many variables there with such a large audience. Maybe I'm missing something there? I'm open other learning more.

I missed this comment! It can be used at a different ratio as the water will be absorbed faster in powder.
