Peel and roughly chop the garlic. Strip the thyme leaves from their sprigs and prep the basil. Using fresh herbs will produce the most fragrant flavor profile, but dried herbs can be used as well. If the basil leaves are large, you may give them a rough chop, although this is optional as they will be broken down in the mortar. When grinding, the salt not only aids in breaking down the garlic but also helps to release its aromatic oils.
