When my recipes say “gluten free flour” I am referring to Bob’s Red Mill
One to One. This can be replaced with a flour of your choice. In the book, I use
many fresh milled grains in my bread recipes and note which flour is being
used and the amount needed for different recipes.

Have you experimented with fresh milled grains/flour for these yet? I’m trying to use fresh-milled more and more than 1:1 these days.

I love that so much! Try swapping it out with my bread flour mix! That's been my go-to-grab. The key is making sure the consistency of the tortilla dough is correct (slightly sticky, light to the tough, and not runny).

Felt discouraged while cooking, because I was getting these babies sooo thin and they still weren't puffing up! Felt dry after cooking, but I stacked them and the residual heat/steam made them softer. I also weighed them exactly 4oz and only got 8 tortillas, so it was an all-around journey 😂 But the feel of the dough was great, and they were super easy to work with! Made some creamy chicken enchiladas with half of them, and I cannot express the literal JOY of being able to eat an actual enchilada instead of just a bowl of filling. Dreaming of the leftovers tomorrow. So grateful for delicious and sturdy GF tortillas!!

Oh no! Don’t even worry about the bubble. The bubble is cool, but it’s not a dealbreaker - they turn out either way!! That’s crazy how I always get 10 4 oz balls when I make them 😅🤣 so glad they were yummy!!

What can I do if the dough is very sticky? Does it need more flour? Thank you!!

Sticky dough is a good thing! You can lightly flour your surface and make it so your hands can use the dough - or lightly oil your hands to make the dough easier to work with!

Taste and texture are good. My husband who’s not gluten free likes them better than regular tortillas. I can’t seem to get them to bubble up like I see yours does but they still turn out nice!

Not all of mine bubble up - but they do all taste delicious. Getting the tortillas thinner helps to create that bubble effect. Either way, they all work out! So glad he loves them! My family is the same way!!
