Braided Bread (Challah)

Traditional Challah Bread uses wheat, rye, barley or oats in the recipe. Of course three out of those four ingredients are a no go for gluten free, but I also error on the side of less oats due to cross contamination, so I make braided bread that is oat free. To adapt the recipe for religious needs, sub out some of the millet flour for oat flour.

Notes

Additional Allergens: Egg: try egg yolk, fluffiness may be effected Yeast: try using this sourdough starter gel instead of yeast (200g Starer, 205g water, 20g psyllium husk) Someone once told me, “ When shaping the dough, pray over the ones you love with each braided piece!” It stuck with me and now I don’t braid my bread any other way!
