Yes! Sorghum is a great substitute as well as corn flour.

Is it sorghum 1:1 replacement for millet? Does it change the texture a lot to only use sorghum?

Millet is my preferred choice. Sorghum is very similar. The texture will change slightly and sorghum has more of a flavor profile, but with the seasonings it should work out just fine! And yes, 1:1 for the millet. When you try it let me know how it turns out. You can also try a gf one to one. The seasonings help this recipe with not tasting as bland with a one to one. Let me know how it goes!
