When you say bake 40-45 mins, how do I know it's done?

The bread will be golden brown on the outside - you can check for an internal temperature of 205-210. I don't love poking holes in gf bread to check temps because it releases the steam needed for setting the crumb. So if you do check, be sure to close the hole/seal it to trap steam. I've been liking mine cooking for 50ish minutes so I'm going to update that!

I can taste the coconut flour and don’t love the flavor of it. What would be the best to swap for this or is it difficult to replace in the recipe?

It can be swapped with almond flour, brown rice flour, more millet, more sorghum, gf one to one - lots of options!

You are welcome to try it without - but when you remove gluten, you remove structure. Xanthan gum and psyllium husk help recreate that structure. I agree - Xanthan gum isn’t my favorite ingredient but I’ve found it necessary in yeast bread. I have been able to figure out sourdough recipes without Xanthan gum (not all of them - but many!) search those within the app.

I agree - Xanthan gum isn’t my favorite ingredient but I’ve found it necessary in yeast bread. I have been able to figure out sourdough recipes without Xanthan gum (not all of them - but many!) search those within the app. I believe the loaf and possibly the sandwich bread is. I’ll have to look.

Changing the flours does changes things slightly, but still creates amazing outcomes. The key is to know the proper consistency of the dough. I suggest watching the attached video in the ingredients list to see the texture and then when changing flours up (which is totally doable) make sure you're matching that texture/hydration!

I was going to point you to the notes section where I’ve been adding the allergens/modifications but I just realized I missed this one! Use Bobs Red Mill Egg Replacer. It works like a charm!
